Another Day in the Neighborhood.

It's Tuesday, june 29. Been very pleasant weather wise. Just kind of been taking it easy all day long, catching up on some rest, :-) Getting some cucumbers out of my little garden spot, so I mad some Cucumber Soup, YUM

Here is the Recipe :

CUCUMBER SOUP



2 cucumbers, peeled
2 tbsp. butter
1 tbsp. leeks, sliced
1 bay leaf
1 tbsp. flour
2 cups of chicken stock
1 cup dry white wine
1 cup heavy cream
Juice of 1/2 lemon
1 tbsp. dill, finely chopped

Sauté 2 cucumbers in butter until tender along with leeks, and bay leaf. Stir in flour, add chicken stock and wine and simmer for 30 minutes. Put through blender then add 1 cucumber seeded, peeled and grated, cream and lemon juice. Stir in dill. Chill. Can be served with a dollop of sour cream garnished with dill.

I made this cake yesterday. It's really good.


Rhubarb Custard Cake
1 yellow or white cake mix. (French Vanilla Cake Mix)
3 Cups chopped rhubarb.
1 Cup sugar
2 Cups whipping cream.
1 cup pecans

Instructions :
Mix cake mix according to directions on box and put cake in 9 x 13 inch greased pan.
Arrange rhubarb evenly over top of uncooked cake.
Sprinkle sugar evenly over rhubarb.
Pour unwhipped cream evenly over rhubarb.
Bake at 350 degrees for 45 minutes.
The cream, sugar, and rhubarb will go to the bottom of the pan forming a custard - like layer.
